Cheese soup is an incredibly popular dish all over the world. It is easy to make, has a great comforting flavour and texture and is a brilliant snack at any time of the year. It can make an excellent starter for any meal or can be simply eaten as a filling snack. with a freshly baked bread roll or a nutritious side salad.
To make your own heart-warming cheese soup you will need:
2 oz. Butter or margarine
4 oz. onion
1 pint hot white stock
1/2 pint milk
2 tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
1 tsp. chopped parsley
4 oz. Grated cheese
The first thing you will need to do is measure out all of your ingredients and keep them close to you because you may need to add them quickly.
Using a clean chopping board and a sharp knife, finely chop all of the onion into small pieces. Next you will need to add the butter or margarine to the pan that you will be making the soup in. Add the chopped onion and fry them together until the butter or margarine turns transparent. Turn the heat off when it turns clear; do not leave it until it turns brown.
Add the stock to the onion and butter mixture and simmer on a low heat for approximately ten minutes and then slowly add the milk. Sift the flour into the mixture and mix up the ingredients until they form a smooth paste. You may need to add a little bit of extra milk to make the paste, keep stirring and bring the mixture to the boil.
Add the pepper, salt and parsley then turn the heat down and stir the mixture for five minutes.
Slowly add the cheese whilst stirring and bring back to the boil for ten minutes. Some people choose to add crumbled crackers into the soup to add some texture; alternatively you could add some garlic flavoured croutons.
This is a recipe for a basic cheese soup but there are so many ingredients that can be added to enhance or change the flavour. Garlic is incredibly popular because it will not only bring out the flavour of the cheese but it will also add its own special flavour. Bell Peppers are also another favourite to add because they are nutritious and will offer a great flavour and colour to the dish. Celery is also popular because it adds a nice, crisp texture to the soup.
For a wheat free option you will need to replace the flour with corn flour and wheat free croutons.
